Introducing the Caja China roasting oven
Holy moly are we ever excited about this! As of September 24 we have a new addition to our roasters: The Caja China.
The Caja China (translation: Magic Box) pronounced "ca-ha chee-na" originated in Cuba as a way to easily roast a whole pig without having to resort to hours of manual hand-turning as was required with spit roasts before the advent of electric motors.
This is essentially a foolproof way to perfectly roast a whole pig--crispy, crackling skin included--with minimal intervention in three to four hours. Splay your pig, lamb or goat inside the oven; close it up; and light a load of charcoal on top. Replenish the charcoal as necessary, and that's about it.
We also sprung for the smoke pistol. This small unit injects a steady stream of pure hickory wood smoke into the Caja China over the course of four hours giving the meat an amazing taste. This unit comes included with your rental.
Finally, we would be remiss not to mention that the Caja China is an amazing way to cook a party-sized load of ribs (10 full slabs) chickens (16 to 18), turkeys (4 to 6) or pork butts (pulled pork anyone?).
Our Caja China is available to rent immediately (except for the Thanksgiving weekend when we're planning to host our own family).
